Amaretto & Goat Cheese Stuffed Pears
Prep Time: 20 Minutes
Cooking Time: 5 Minutes Serves: 6

Ingredients:
12 almond-flavored
cookies* |
1/4 tsp. ground cinnamon |
| 3 large firm yet ripe pears,
peeled, at room temperature |
| 1/3 cup almond-flavor liqueur (we used Amaretto®) |
| 3 Tbsp. freshly squeezed orange juice |
| 2 tsp. fresh grated orange peel |
3 oz. Ile de France® Goat
Cheese, crumbled
(6 Tbsp.) |
| 1/4 cup chopped pecans, toasted |

Directions:
1. Place cookies and cinnamon in a zipper seal bag. Using a rolling pin, crush cookies. Remove and set aside 2 Tbsp. crumbs.
2. Cut pears in half lengthwise. Using a teaspoon, remove and discard the core from each half. Scoop out and chop an additional 2 tsp. from the center of each pear. Place chopped pear into a small bowl. Add the cookie crumbs from the baggie, amaretto and orange peel. Stir to combine.
3. Arrange pears cut side up in a 10-inch shallow microwave safe glass dish. Evenly divide and fill the center of each pear with the cookie mixture. Cover. Microwave on HIGH for 4 to 5 minutes or until pears are slightly tender and warm. Sprinkle each pear half with 1 Tbsp. cheese. Cover and let stand 2 minutes. Sprinkle with reserved cookie crumbs and nuts. Serve with juice from the bottom of the dish.
*Or use any thin cinnamon, vanilla or even oatmeal cookies
