Place a large leaf of red endive into pretty, little service spoons. Add the alfalfa sprouts. Prepare the vinaigrette, combining the balsamic vinegar, salt, pepper and hazelnut oil. Coat the sprouts with this vinaigrette mixture, layering with slices of Caprice des Dieux. Finish with a sprinkle of crushed pistachios.
The alfalfa, which can easily be found, fresh and in containers, in supermarkets, as well as, in health food stores, has a fine and pleasant flavor. Alfalfa may be replaced with germinated seeds (sunflower, flax, etc.).
