Chaumes Muffins

*4 ½ cups grated Chaumes cheese
*1/3 lb bacon
*2 eggs
*1 stirred yogurt
*2 ¼ cups flour
*1 / 2 teaspoon baking powder
*4 tsp. tablespoons sunflower oil
*1 tsp. cumin seeds
*1 / 2 tsp. teaspoon salt
*Ground pepper


Preheat oven to 375 ° F. Bring a saucepan of water to boiling. Throw in the bacon, simmer 1 minute, then drain. Dice the cheese.

In a bowl, beat the eggs with a fork, add the yogurt and sunflower oil, then the bacon and diced old bread.

In a second bowl, mix the flour, baking powder, cumin seeds, salt and pepper. Stir this mixture quickly with a spatula, but just short of obtaining a homogeneous preparation.

Divide the dough and place into 12 muffin tins. Do not fill more than two-thirds. Bake for 25 minutes. Let cool outside the oven.

Serve two muffins per person with a lettuce salad, seasoned with shallots and a touch of garlic.

Additional Tips

If you wish, you can add chopped herbs along with the Chaumes. Chervil is noted for its flavor, which blends perfectly with cheese, or dill, which is known for its scent of anise.
