Goat Cheese Muffins

*1 2/3 cups flour
*1 / 2 teaspoon baking powder
*3 eggs
*2/3 cup 3% extra light Elle & Vire Cream
*2/3 cup soft log Ile de France goat cheese
*3 tbsp 41% Elle & Vire Beurre Tendre Léger + 2 tbsp reserved for the muffin tins
*4 tbsp raisins
*1 pinch of salt
*1 tsp ground pepper


Preheat oven to 350 ° F. In a large bowl, combine the flour and yeast. Sift. Add the eggs. Mix. Add the 3% extra light Elle & Vire Cream and 3 tbsp of 41% Elle & Vire Beurre Tendre Léger, melted.

Crumble the goat cheese and add it to the mixture. Add raisins. Salt and pepper. Mix.

Pour the batter into 12 buttered muffin tins, filling each to three-quarters.

Bake for 20 to 25 minutes. Serve as an appetizer or as an entree with a salad.

Additional Tips

You can replace the raisins with diced, dried apricots.
