Broccoli Soufflé

- ¾ Cup sour cream
- 2 eggs
- 1 log of goat cheese (8 oz)

Preheat oven to 365 ° F.

Cook the broccoli (steam or boil). Meanwhile, beat the egg whites.

After cooking the broccoli, allow to cool. Combine the egg yolks, sour cream, salt and pepper. Mix with the beaten egg whites. Fill each of the 16 small molds with the mixture up to 3 / 4 full (if possible, use silicone molds for cannelés or muffins). Top each mold with a 1 / 2 slice of goat cheese. Bake for 25 minutes. To be enjoyed warm.
