Place a slice of Ile de France Brie in the center of one wonton wrapper; top with a thin slice of guava paste. (Make sure to fill wonton wrapper with more brie cheese than guava.) Lightly brush edges of wonton wrapper with beaten egg. Fold corners of wonton wrapper toward the center (so that all corners meet in the center). Press edges to seal. Repeat steps to fill each wonton wrapper with brie and guava. Set aside.
Pour cooking oil in a heavy skillet to cover bottom and about 1 inch up the sides. Heat oil over medium-high heat. When hot, cook filled wonton wrappers in oil, turning over once, for about 10-12 seconds or until just golden brown on both sides. Remove with a slotted spoon and place on paper-lined plated to drain. (If oil gets too hot, reduce temperature as needed.) In a small saucepan, heat heavy cream and white chocolate chips over low heat, stirring occasionally, until chocolate has melted completely. Remove from heat; stir in vanilla extract and orange zest. Transfer brie and guava pillows to a serving plate. Drizzle with orange-scented white chocolate. If desired, garnish with mint leaves and additional orange zest. Serve immediately.
Tip: Guava paste can be found in the grocery store’s ethnic aisle. If unavailable in your local market, substitute with apricot preserves.
