Preheat oven to 400° F.
Cut the stalk from the cauliflower, separating and discarding the leaves from the florets.
Bring to a boil a pot of salted water, add the cauliflower florets and let them cook 12 min to 15 min. They must remain fairly firm. Meanwhile, chop the parsley, mix in a bowl with the quark and some pepper.
When the cauliflower is cooked, drain and place in a gratin dish. Drizzle the quark preparation over the cauliflower.
Cut Chaumes into strips and arrange atop the cauliflower.
Bake 5 min.
- Prepare the same dish with 2 bunches of broccoli or a beautiful head of romanesco cabbage lettuce. You may use: Frozen parsley.
