Strawberry Cheesecake with Boursault Cheese

Ingredients: For Crust: 1.5 cups graham cracker crumbs, 2.5 tablespoons sugar and 3 tablespoons of melted butter For filling: 12 oz. softened cream cheese 12 oz. softened Boursault or Ile de France Brie cheese 1 cup sugar 2 teaspoons grated lemon peel 1/4 teaspoon vanilla extract 3 tablespoons of cornstarch 1 cup of diced strawberries 3 large eggs 1 tub (8 ounce) Cool Whip 2 cups of fresh of sliced strawberries


Directions Preheat Oven to 375. To make crust, stir together graham cracker crumbs and sugar, add melted butter and place in to a 9-inch pan. Bake for 10 minutes and let cool. Reduce the oven temperature to 300. Mix cheeses in a large mixing bowl. Gradually add 1 cup sugar and mix until fluffy. Add 2 grated lemon peel and vanilla. Mix in eggs, one at a time and then stir in strawberries. Pour into the shell and bake for about 1 hour, or until the center is set. Let cool for about an hour, then let chill until firm. To top, mix whipped cream and 2 cups of fresh sliced strawberries. Spread on top of cheesecake.
