Beaufort Mac and Cheese

At a glance
3 cups couscous
2 cups heavy whipping cream
3 tablespoons white truffle butter
3 tablespoons white truffle oil
1 cup Ile de France Beaufort cheese
1/2 cup cream cheese
2 teaspoon salt
2 teaspoon black pepper


Preheat Oven: 400 degrees
Cook the couscous as if it was pasta, chill and hold. Then reduce the cream by half. Melt half of the Beaufort cheese, cream cheese, truffle butter, and truffle oil into the cream. Season to taste. Then combine the couscous with the cheese and cream and put in a casserole dish. Cover the remaining with Beaufort cheese. Bake at 400 degrees until the Mac’n’Cheese is brown on top.
