Tomato Tartar with St. Agur

* 28 oz tomatoes
* 4.4 oz of Saint Agur
* 8.5 oz basmati rice
* 1/2 cucumber
* 1.4 oz flaked almonds
* 2 Tbsp. parsley
* 2 Tbsp. lemon juice
* 1 Tsp. balsamic vinegar
* 2 Tbsp. olive oil
* 2 Tbsp. yogurt
* Sea Salt pepper

Methods/steps

Cook rice in boiled salted water according the instructions in the box. When rice is ready, drain under cold water and set aside.

Tomato and St. Agur Tartar Meanwhile, slice the tomatoes into 4 equal pieces, de-seed them and dice them. Then add the crumbled Saint-Agur cheese and mix with the tomatoes.

Peel and scoop the seeds out of the cucumber, cut it in half then dice it. Mix the cooked rice to the diced cucumber and snipped parsley. Put 1/4 of the preparation in each plate, next to the tomato Tartar. Add almonds on the rice.

In a bowl, mix the balsamic vinegar, yogurt and olive oil with a little pepper. Drizzle this dressing over dish right before serving.
