Baked St. Agur in Roasted Pears with Walnuts

* 4 pears
* 4.4 oz of Saint Agur
* 1.4 oz of whole walnuts (not crumbled)
* 4 Tsp. honey
* 5.3 oz canned corn
* 3 shallots
* 1 Tbsp. lemon juice
* 2 Tbsp. Yogurt
* 1 Tbsp. olive oil
* Pepper to taste

Methods/steps

Preheat the oven 350°F.
Peel the pears. Cut the bottom of the pear so they can stand up on their own. Then cut them in half and cut the core out.

In a bowl, mash the Saint Agur with a fork. Crush walnuts and add them to the cheese. Fill the pears with the cheese and walnut mixture, then close the pears. Tie the pears together with cooking string.

Place the pears on a baking dish. Drizzle each pear with honey and pepper and place in the oven for 18 minutes.

Meanwhile cook the corn as directed, drain and let cool. After cooled, put it in a big bowl. Peel and thinly chop the shallots and add into the salad bowl. In another bowl, combine the yogurt, lemon juice, olive oil and pepper. Add this dressing to the salad and lightly toss.

Pears are best served right out of the oven with the salad.
