* 4 thin slices white or wheat bread
* 12 thin slices peeled cucumber
* 2 oz. goat cheese, such as Ile de France, at room temperature
* Arrange the cucumbers on 2 slices of bread.
* Spread the goat cheese on the remaining slices.
* Place the bread slices with the goat cheese on top of the bread slices with cucumbers.
* Remove the crusts from the bread and cut into four triangles.
* Serve with hot or iced tea.
