Goat Cheese & Chive Gougeres

At a glance
1 Cup milk
1 stick unsalted butter
1 tsp kosher salt
1 cup all-purpose flour
5 eggs
½ cup crumbled Ile de France Goat cheese
2 tbsp chopped fresh chives
¼ tsp black pepper
2 tbsp grated Fol Epi cheese (optional)


Preheat oven to 375 degrees and cover two baking trays with parchment paper so puffs won't stick.

In medium saucepan, bring milk, salt, and butter to a boil.

Once butter is melted add the flower and stir for 20-30 seconds until the dough forms and stops sticking the pan. Reduce heat and set aside for 5 minutes until cool.

Beat in 4 of the eggs, one at a time, along with Goat cheese, chives, and black pepper. Mix thoroughly.

Place large teaspoonfuls of mix onto baking sheets about 1 inch apart.

Brush tops of puffs with egg wash (helps create golden-brown crust) then sprinkle some Fol Epi cheese on top.

Bake for 20-25 minutes; make sure to rotate trays halfway through cooking process.
