Saint Agur Bleu Cream of Cauliflower Soup

Perfect for Winter, this decadent soup combines nutrient-filled cauliflower, garlic, onion, and bold Saint Agur Cheese. Saint Agur has the perfect amount of sharpness yet is creamy and delicious, adding amazing texture to this soup.

Saint Agur: 5 oz
Pepper: 1 pinch
Olive oil: 1 tablespoon
Crème fraîche: 2 tablespoons
Chicken bouillon: 1 cube
Garlic clove: 1
Onion: 1
Cauliflower: 1


Peel and chop the onion and garlic. Heat the oil in a large saucepan.
Add garlic and onion and allow to sweat for 2 min. Add 4 cups of water and pepper. Bring to a boil. Add the bouillon cube and stir to dissolve.
Add the cauliflower, separated into florets. Cover and simmer for 15 minutes. Then, add the crème fraîche and blend until velvety.
Pour into 4 shallow plates and layer each with 2 strips of peeled Saint Agur.
Serve immediately.
