French Onion Soup with St. Albray Cheese

Traditional French Onion Soup consists of a few kinds of onions topped with gruyere cheese. If you want a bolder cheese experience, try using melted St. Albray cheese instead to really elevate the flavor.

Whole wheat bread: 8 slices
Thyme: 1 teaspoon
Chicken stock: 4 cups
Butter: 1 oz
Saint Albray Cheese: 4 oz
Onions: 4


Finely mince the onions. Slightly brown the butter over very low heat for 10 minutes. Add the onions, chicken stock, salt and thyme. Simmer gently for 45 minutes.
In an oven, grill the slices of bread. In the last moment, add a slice of St. Albray on each piece of bread. Allow the cheese to melt a few minutes in the oven.
Pour the soup into soup bowls and layer with the grilled cheese slices. Also, add some of the St. Albray to the soup.
Enjoy it warm.
