Brie Wheel Spinach Dip

At a glance
1 (8 oz.) wheel Ile de France® Brie 1 Tbsp. butter
2 cloves garlic, smashed and roughly chopped
1 bag spinach (not baby) roughly chopped
Few grates fresh nutmeg
1 tsp. fresh cracked pepper
1 tsp. kosher salt
5 large pita breads
Cayenne pepper to taste
2 Tbsp. olive oil


1.Let cheese sit at room temperature for 10-15 minutes. Cut through top rind and scoop out cheese (rind, too!) with paring knife, reserving hollowed-out rind. Melt and foam butter over medium heat.

2.Add garlic and cook until slightly golden-brown. Add spinach; sauté until tender. Turn to low and mix in scooped-out brie. Stir and fold until creamy.

3.Transfer mixture to hollowed-out rind and let sit a few minutes before serving. Serve with pita chips.

For Pita Chips: Cut each pita bread into 8 pieces, toss in olive oil and cayenne, and bake in 350°F degree oven for 10-15 minutes, or until crisp.
