Ile de France Camembert and herb Croquettes

8 oz Ile de France Camembert
9 oz Breadcrumbs
3.5 oz Flour
3 Eggs
1 Tablespoon Olive oil
3 Tablespoons Coriander
3 Tablespoons Mint
1 Teaspoon Cumin
1 Tablespoon Paprika
1 Liter Frying oil
1 Salad Mix


Chop the herbs. Dice the Camembert into 2 cm pieces. Beat the eggs with olive oil and add salt & pepper. Mix the spices and finely chopped herbs with the breadcrumbs. Bread the nuggets: first, dip the diced Camembert pieces in flour and be sure to shake off the excess flour on them. Dip in beaten eggs and then roll in the herbed breadcrumbs. Fry in hot oil until patties are nicely golden. Drain the oil out by placing them on absorbing paper.
