Ile de France Goat Cheese and fish Croquettes

1 pinch Fine salt
3 tablespoons Olive oil
2 oz Breadcrumbs
4 tablespoons Flour
2 Eggs
1 Lemon
18 oz Cod Fish Filet
2 oz Ile de France Goat Cheese


In a bowl, beat the eggs with a whisk. Put the flour in another bowl then the breadcrumbs in a third bowl. Cut the fish into large cubes. Cut the cubes of fish into two vertical slices and spread them between the Ile de France Goat Cheese, like a sandwich. Dip the fish cubes in flour then in the beaten egg mix and then in the breadcrumbs. Make sure to dip them well into these so that they do not come of during cooking. In a pan, heat the olive oil and fry the cubes of breaded fish for 3-5 minutes on high heat, turning them regularly: the bread crumbs should be golden. Serve immediately with a drizzle of lemon juice or homemade ketchup and home fries.
