Goat cheese, honey, date & pistachio “truffles” by Chris Kohtz

At a glance
10oz Ile de France Goat Cheese
1/2c finely ground pistachios (I prefer shelled and salted)
5 whole Medjool dates, pitted and coarsely chopped
2T honey (light and floral, Basswood is perfect)


By hand, combine the honey, goat cheese and chopped dates; mix until evenly distributed.

Using a small spoon, scoop about one tablespoon of the mixture and roll into a ball in your palms.

Lightly roll each "truffle" in the chopped pistachios let lightly roll again in your hands.

Chill until ready to serve
