At a glance
1- 4oz package Ile de France goat cheese
1-2 medium peaches*
4 sprigs fresh thyme, or about 1/2 tsp dried thyme
4 flour tortillas
olive oil for brushing

*If peaches are not available in your area, thinly sliced apples make a great substitution.


Preheat oven to 425. using a pastry brush, brush both sides of tortillas with a thin coat of olive oil. (This will create a crispy crust) Using fingertips, break the goat cheese into small pebble-sized pieces. divide evenly across all 4 tortillas. Slice peaches into thin wedges and add to tortillas. Sprinkle thyme over each tortilla. Bake at 425 degrees for 15 minutes or until cheese melts and edges of tortilla begin to brown. Using a pizza cutter, cut each pizetta into 4 wedges and serve immediately.
