Spring Chicken with Lemon, Chives and St. Agur Cheese by Renata

At a glance
¼ cup Dijon mustard
1 tablespoon lemon juice
¼ cup chopped chives, divided
4 chicken hindquarters
2 teaspoons lemon pepper
8 oz. Ile de France St. Agur cheese
1 tablespoon lemon zest
Chive flowers for garnish
4 lemon wedges
4 cups cooked black rice or wild rice


Preheat oven to 375 Degrees F.

Combine mustard, lemon juice and half of the chives. Spread on chicken. Sprinkle with lemon pepper and bake at 375 degrees F. for 35-45 minutes or until done. Top each chicken with a slice of Ile de France St. Agur cheese and place back in the oven until just melted, a few seconds. Garnish with lemon zest, lemon wedge, the rest of the chives and flowers. Place on a bed of black rice and serve.
