Fruit and Ile de France Goat Cheese Salad

At a glance
1 1/2 cups orange juice, fresh squeezed (about 6 medium oranges)
1/3 cup sugar
2 tbsp. anise flavored liqueur
1 tbsp. fresh lemon juice
1 cup peaches, diced
1 cup plums, diced
1 cup honeydew melon, diced
1 cup cantaloupe, diced
1 cup mango, diced
1 cup raspberries, blackberries or pitted cherries
7 oz. Ile de France Goat Cheese
6 tbsp. orange or lavender honey
6 tbsp. pine nuts, toasted


In a large bowl, stir together orange juice, sugar, liqueur and lemon juice until sugar is dissolved. Add peaches, plums, honeydew, cantaloupe and mango and stir gently. Cover and chill 2-3 hours.

Gently stir in berries. Spoon into 6 shallow bowls.

In a microwave oven or over low heat, heat honey just until warm. Sprinkle cheese onto fruit, then drizzle cheese with honey and sprinkle with pine nuts. Serve immediately.
