St. Nectaire Tart

- Ingredients:
- 1 piecrust
- 8 oz. of St. Nectaire
- 3-4Tomatoes
- Salt, pepper, Cayenne pepper,
- Breadcrumbs
- Butter
- A few black olives

Direction
- Take a piecrust.
- Put down 8 oz. of thinly sliced St. Nectaire cheese onto into crust.
- Cover the cheese with a layer of thinly sliced tomatoes.
- Season with salt, pepper and add a very small piece of Cayenne pepper.
- Sprinkle with breadcrumbs and chopped black olives.
- Dot with several pats of butter. Then bake1/2 hour in a hot oven.
- Serve hot or cold with a bottle of Bordeaux.
