Omelet with St. Nectaire Cheese

- Ingredients:
- 5-6 fine slices of St. Nectaire
- 1/2 cup sugar
- Salt, pepper and paprika to taste,
- 3 eggs
- 1 3/4 c. flour
- 1 packet of yeast

Direction
- Beat the eggs with sugar, salt and pepper.
- Add a dash of paprika. Pour half the beaten eggs into a hot, buttered frying pan. Cook eggs until golden on both sides (like a crêpe) and put into an oven-safe dish. Cover this omelet with finely sliced St. Nectaire cheese. Make a second omelet with the remaining half of the beaten eggs.
- Place this omelet on top of the first omelet and cover with the remaining slices of St. Nectaire.
- Put the whole omelet in a hot oven and bake 5-6 minutes
(until cheese is golden on top).
