* 7 oz canned corn
* 8.8 oz white of chicken
* 4.4 oz Saint Agur
* 2 apples
* 1/2 baguette
* 1 Tbsp. olive oil
* 1 Tbsp. cider vinegar
* 1 Tbsp. walnut oil
* 2 Tbsp. plain yogurt
Steam the chicken breast or grill it, then let it cool.
Slice the baguette in one inch slices and cut each baguette into 4 pieces. Slightly grill the croutons 2-3 minutes to warm them up (don’t brown them). Cook the corn as directed, put it in a bowl till cooled. Add chopped chicken and the croutons then with the diced St. Agur cheese.
In a bowl whisk vinegar, cider, walnut oil and yogurt, with pepper to taste. Drizzle this dressing to the salad and lightly toss to coat.
Peel the apples and cut them into thin slices. Place the slices on top of each serving.
