* 1/2 Boursault
* 16 slices of toasted gingerbread
* 1 tablespoon of minced chives
* 1 tablespoon of quince jelly
* Salt and pepper
* With a fork, crush the cheese and chives together. Add salt and pepper.
* Form the cheese into small balls, then place them between two slices of toasted gingerbread.
* Garnish each slice with a bit of quince jelly, and decorate with chives.
