The Ultimate Cobb Salad

Invented by a hungry chef using whatever leftovers he found, Cobb Salad has become the classic all American salad. It also just happens to feature French Roquefort Cheese!

The base of Cobb Salad consists of mixed greens, including iceberg lettuce, watercress, and Romaine lettuce. Now here comes the fun ingredients: tomatoes, bacon, chicken breast, avocado, chives, and our creamy, flavorful Roquefort cheese. All of these gourmet ingredients are topped with a simple red wine vinaigrette. There's plenty of ingredients, but it's easy to prepare and the flavors come together deliciously.

½ head romaine, chopped
½ head iceberg, shredded
½ bunch watercress, chopped
2 oz. Ile de France Roquefort cheese, crumbled
6 strips bacon, cooked and chopped into bites
3 hard-boiled eggs, cut into cubes or slices
2 tomatoes, cut into cubes
1 avocado, pitted and cut into cubes
2 tbsp minced chives
Salt and fresh ground black pepper, to taste

¾ cup canola oil
¼ cup olive oil
¼ cup red wine vinegar
½ lemon, juiced
1 clove garlic, diced finely
Salt and fresh ground black pepper, to taste

1. Combine canola oil, olive oil, red wine vinegar, lemon juice, and garlic in a blender and puree until smooth. Season with salt and pepper and set aside.

2. On a large platter or in a large bowl, combine iceberg, romaine, and watercress and toss. Arrange the Roquefort, bacon, eggs, chicken, avocado, and tomatoes on top of the greens. Now drizzle some dressing over the top and it is ready to eat! If you prefer, toss all the ingredients together.
