Homemade cheese and chocolate truffles:

Filling
  • 4 ounces (with rind removed) Ile de France Brie, Camembert, Goat Cheese or Roquefort, softened at room temperature
  • 1 tablespoon sugar
  • 2 ounces dark or milk chocolate chocolate shavings
Coating  6 ounces of chocolate shavings
  1. Combine cheese and sugar and mix until sugar dissolves.
  2. Melt the filling chocolate over simmering water
  3. Combine melted chocolate, sugar, and cheese and work together with a wooden spoon or flexible spatula until the mixture is consistent.
  4. Roll mixture into 1/2-inch balls and refrigerate for 15 to 20 minutes.
  5. Melt the coating chocolate and dip the cheese balls in it.
