One of my favorite Ile de France cheese is the Camembert Cheese. Luscious and creamy, it lends itself to easily being transformed in recipes. One of my favorite ways to use it is a simple appetizer using two more ingredients: phyllo dough and raspberry jam. Topping the cheese with your favorite preserve and then wrapping it in delicate sheets of phyllo creates a surprise for anyone that cuts into it. Perfect appetizer - use pumpkin butter or apple jam
to make it seasonal!

I love goat cheese, especially in quiche! A close second would be Brie, used in my fig, proscuitto and Brie panini. Heaven!

My favorite Ile de France cheeses are the goat cheese and Brie. I love to use the goat cheese in Asparagus/tomato tarts, so creamy and amazing. The little tang and zing from the goat cheese are perfect. For the Brie, I usually put a thin slice on cracker, top with a slice of salami, a dollop of sour cream
on top and sprinkle with fresh herbs.
