Gratin with Fourme d'Ambert

- Ingredients:
- 2 lbs. small, firm potatoes
- 8 oz. Fourme d'Ambert
- 1/2 cup fresh cream
- Salt and pepper
- Chopped parsley

Direction
- Boil the potatoes, unpeeled, in salted water. Peel potatoes and place in small oven-safe dish.
- Blend the cheese, cream, seasonings and parsley.
- Pour the cheese mixture over the potatoes, and then place under broiler just until the top is browned.
