Introducing Salad Saturdays!

Summertime eating is all about freshness – and what’s fresher than salad? But vegetables alone can only deliver so much flavor. So how can we turn nutritiously green salads into zesty treats? Cheese, of course! That’s why we’re introducing Salad Saturdays! All summer long, we’ll be highlighting the many ways foodies enliven fresh salads with French cheeses.

First up, food blogger Caroline Edwards @chocandcarrots who shares with us this delectable salad idea:

“Warm, fried goat cheese balls are my absolute favorite salad toppers. Pair the salad with a balsamic vinaigrette, apples or pears, candied walnuts and the goat cheese balls. Salad heaven!”

Summer Cheeses

For reasons unknown, cheese seems to be an afterthought or merely a garnish ingredient in summer cooking. For most, the summer diet is centered on the almighty grill and the fresh flavors of colorful fruits and vegetables. However, just because the weather is warming up doesn’t mean you have to stop eating cheese.

Two of the most versatile – not to mention delicious – summertime cheeses are Chevre and Brie. Both are ideal for warm weather eating!

 

1. Chevre

This slightly salty and fresh tasting cheese with a rich texture tastes great with mixed vegetables, crunchy greens, and sweet, citrus fruits. The tangy acidity pairs well with white wines such as, Pinot Grigio or Sauvignon Blanc. (Cobb Salad with Goat Cheese and Vinaigrette pictured.)

2. Brie

The fresh milky note and remarkably creamy texture of this cheese tastes delicious on its own and can also be enjoyed in several ways. Served with fruit compote, light summer pasta, or on top a grilled burger, this cheese will enhance any flavor profile. (Exotic Lamb Burger with Herbed Brie pictured.)

St André, Red Grapes & Cashews Salad with Balsamic Vinegar Video Recipe

Want to impress your guests with a simple yet amazingly delicious gourmet dish? Try this fantastic St André, Red Grapes and Cashews Salad with Balsamic Vinegar video recipe from Chef Raymond at Sandrine’s in Harvard Square!

The ingredients you need are: St. André cheese, seedless red grapes, fresh tarragon, baguette, balsamic vinegar, Port wine vinaigrette, cashews.

Start out by making a Port Wine Vinaigrette! Blend red wine vinegar, port wine, Dijon mustard and garlic all together in a blender until smooth.  Then add the vegetable and olive oil and mix well until smooth again.  Add salt and pepper to taste.

The next step is making the salad itself. Start out by slicing the red grapes and putting in a bowl with chopped tarragon. Add roasted chopped cashews and mix in the Port wine vinaigrette.

Put slices of St. André on the toasted baguette slices, and add some grape salad on the plate – do it right before serving.  For decoration use tarragon, and drizzle some extra Port wine vinaigrette and some vinegar around the plate.

Appetites decrease during hot summer days because people don’t feel like eating hot meals. Salads make the perfect dish for either lunch or dinner because they are fresh and light! Also, your body needs more energy on hot days and salads help meet your daily nutrition needs.
