This week’s cheese pairing recommendation is from wok star and fellow cheese lover, Eleanor Hoh (@wokstar):

“As a wok cooking teacher and Wok Star , I’m always finding new foods to cook in my wok! My husband and I like to experiment with new ways to make omelets interesting and there’s nothing better than adding cheese. Cheese gives omelets another flavor dimension and oompf! Two of our favorites are soft or hard goat cheese and ones that melt like Emmental. This is probably sacrilegious to the French but we slather chili sauce all over our cheese omelets, yum. We like to pair Asian foods with Champagne, Francois Montand sparkling wine because it’s light and not too sweet. When I serve this pairing in my Wok Workshops, people always enjoy it. I also like Vouvray wine, again not too sweet to overwhelm my dishes.”

Food for thought! Did you know that goat’s milk cheese, which we now call “chèvre,” was considered the “poor man’s cheese?” According to Nancy Carr, those who couldn’t afford cows, or did not have open grazing land, could often raise goats instead and make goat cheese. This was taken from Nancy Carr’s article on the Auburn Pub that spoke of her passion for cheese and how she likes to enjoy it during the fall season!

Bacon cheeseburger sets world record!

About a week ago in CARLTON a Minnesota casino set a world record! It cooked up a world-record bacon cheeseburger that was 10 feet in diameter and weighed more than a ton.

Guinness Records representative Philip Robertson verified the record for biggest burger and said that the burger “actually tastes really good”. By the way the previous mark was a mere 881 pounds, 13 ounces.

The ingredients of winning Black Bear’s burger were: 60 pounds of bacon, 50 pounds of lettuce, 50 pounds of sliced onions, 40 pounds of pickles and 40 pounds of cheese. Read more…

Delicious and Cheesy French Fries

French fries are one of the most popular comfort foods in the U.S. They’re often seasoned with different ingredients and toppings – including cheese! It’s not surprising that Cheese French fries recipes can be found on restaurant menus all over the country. In fact, a recent article at Foxnews.com lists the most outrageous gourmet cheesy French fries America.

French fries with cheese can be easily prepared at home, too. Traditionally it involves two steps of preparation: preparing the fries and preparing the cheesy sauce of course. Here’s a great example: Baked Spicy Fries with Garlic Cheese Sauce recipe at “Pinch of yum.”

By the way, French fries isn’t the only comfort food that can be made with cheese! French Toast, Macaroni and Cheese, Omelettes or Quiche Lorraine, Soups and Gratin, Cheesecake and more can all be even more delightful and stunning with cheese!

How to eat stinky cheeses without getting bad breath

It’s hard to find someone who doesn’t eat cheese, especially in the United States. Think of common favorite foods: pizza, macaroni and cheese, grilled cheese sandwiches and even classic salads all feature cheese. However, eating some cheeses can sometimes come with a price: bad breath.

A recent article at TheraBreath.com provides great rules for eating cheese and avoiding halitosis (bad breath). Follow Harold Katz’s advice and always keep your breath fresh no matter how stinky you favorite cheese is!

Fro example, main rule is simply using a breath freshening product after eating. The two best tools for the job are: an oxygenating toothpaste, which banishes bacteria or an alcohol-free mouthwash, which can flush away proteins and odor compounds.
