The week was hot and the weekend will be even hotter!

Refresh yourself with the combination of summer fruits and gourmet cheese!

Summer-friendly cheeses bring out the natural sweetness of summer fruits such as melons and peaches. Berries are the perfect “summer dress” for a wedge of cool, creamy Ile de France Brie. Fresh or tossed with sugar until syrupy – serve your choice of ripe strawberries, blueberries and raspberries over the Brie for a sweet snack or a dessert. Make sure to use only a thin slice of cheese so as not to overwhelm the taste of the fruit.

What are your plans for life after retirement?
Spending more time gardening, traveling or collecting stamps?

Have you ever thought about making cheese?

Kathleen and Andrzej moved to Belize, the only English-speaking nation in Central America, to start a new life after retirement. The couple bought a farm in a rural area, near ancient Maya ruins and started to raise pigs, goats, sheep’s and other farm animals. Since there is only one dairy in Belize and imported cheeses from the US are very expensive and limited, Andrzej decided to make his own cheese.
