Ingredients
- 8 oz Ile de France goat cheese
- ¾ c sugar
- ½ c sour cream
- 1/3 c heavy cream
- 2 Tbsp lime juice
- ½ tsp lime zest
- 1 tsp vanilla
- 5 eggs
- 1 c crumbled graham crackers
- 1 Tbsp butter
- 1 tsp honey
- Lime zest
Instructions
- Prepare molds by lining them with parchment paper
- Make crust by mixing graham crackers, butter, honey and lime zest in food processor
- Divide mixture between your rings and pack down tightly to ¼ inch in height
- Bake at 250 for 20 minutes
- Mix the goat cheese, sugar, sour cream, heavy cream, lime juice and lime zest and eggs until smooth in kitchen aid mixer
- Pour into molds filling ¾ of the way
- Bake at 225 for 30 minutes
- Chill
- Serve with Blueberry compote or mixed berries
