Goat Cheese & Lime Cheese Cake with Graham Cracker Crust & Blueberry Compote

Ingredients
  • 8 oz Ile de France goat cheese
  • ¾ c sugar
  • ½ c sour cream
  • 1/3 c heavy cream
  • 2 Tbsp lime juice
  • ½ tsp lime zest
  • 1 tsp vanilla
  • 5 eggs
  • 1 c crumbled graham crackers
  • 1 Tbsp butter
  • 1 tsp honey
  • Lime zest
Instructions
  1. Prepare molds by lining them with parchment paper
  2. Make crust by mixing graham crackers, butter, honey and lime zest in food processor
  3. Divide mixture between your rings and pack down tightly to ¼ inch in height
  4. Bake at 250 for 20 minutes
  5. Mix the goat cheese, sugar, sour cream, heavy cream, lime juice and lime zest and eggs until smooth in kitchen aid mixer
  6. Pour into molds filling ¾ of the way
  7. Bake at 225 for 30 minutes
  8. Chill
  9. Serve with Blueberry compote or mixed berries
