Gourmandise Gourmandise Gourmandise, this soft, buttery textured French cheese, available in two flavor varieties, offers a very distinctive taste experience. It is exceptional in combining a delicate and smooth cheese paste with crunchy walnuts or aromatic cherries.
Those who have tried it can't seem to get enough of it. Gourmandise is especially popular around the holidays, as it makes a unique party spread.
 
Made from cow’s milk, this spreadable processed cheese is a unique blend of aged cheeses (Gruyere and Cheddar), and cream, with a hint of added flavors. One type is flavored with walnut and is excellent with pears and other winter fruits, or even accompanied by blue cheeses.
The other type is infused with kirsch, the clear brandy distilled from cherries and their pits and used in making fondue, and black forest cake. Gourmandise varieties are most commonly served as dessert cheese; a true delicacy especially when served with dessert wines like Sherry or Port or well chilled champagne.
Gourmandise
Gourmandise: (noun) unrestrained enjoyment of fine foods, wines, and the like. The name Gourmandise is derived from French word “gourmet”. It implies a satisfaction that is felt when savoring the taste of richly flavored delicacies. This exquisite cheese is appropriately named in account of its savory quality.
Ingredients: (serves 6)
1 lb. thinly sliced chicken breasts
2 tbsp olive oil
2 tbsp minced shallots
1/2 cup dry white wine
1/2 cup chicken broth
1/8 tsp ground black pepper
4 oz Rambol® Gourmandise with Walnuts
(cut into 1" pieces, 1/2 cup)
2 medium ripe pears, halved lengthwise,
cores and cut into eights
1 tbsp chopped fresh parsley
2 tbsp chopped toasted walnuts

Gourmandise and Walnut Sauce over Sautéed Chicken and Pears

A wine cream sauce, mild pears, crunchy walnut and velvety Gourmandise cheese blanket the tender chicken, to make a simple and divine entrée.

Directions:
1. Preheat oven to 350° F. Season both sides of chicken with salt and pepper. Ina large skillet, brown both sides of chicken in hot oil. Place chicken into an ovenproof dish, then into the oven, to hold and complete cooking.

2. Dispose of excess oil from the skillet. Lower heat to medium. Add shallots to the skillet. Cook and stir for 1 minute. Add wine, chicken broth and pepper. Bring to boil. Continue to boil, scraping bits from bottom of pan, until only 1/4 cup liquid remains. Remove from heat.

3. Using a whisk, stir in cheese until thoroughly smooth. Add pears and parsley. Cover and bringt o boil, stirring occasionally to combine pear juices into the sauce Stir any natural juices from chicken into the cheese sauce. Cook until pears are tender. To serve, pour sauce over chicken. Garnish with walnuts.

Suggestions:
Simple sides, like steamed or sautéed green beans and wild rice, round out this dish perfectly.
