A Glass 0f Boursault, Greek Style
Preparation time: 20 minutes · Servings: 4 Glasses
- Ingredients:
- 1 cucumber
- 1 Boursault
- 1 tablespoon olive oil
- 2 tablespoons fresh minced coriander
- 4 tablespoons cubed multicolored bell pepper
- 1 tablespoon minced chives
- Salt and pepper

Direction
- Peel the cucumber. Remove the heart and seeds. Cut into pieces and put in the blender with the Boursault and the coriander.
- Set to a fast speed to obtain a fine purée. While mixing, salt and pepper to taste.
- Add olive oil.
- Pour mixture into glasses. Garnish with chives and cubes of bell pepper.
- Serve cold.
