Boursault on Toasted Gingerbread

- Ingredients:
- 1/2 Boursault
- 16 slices of toasted gingerbread
- 1 tablespoon of minced chives
- 1 tablespoon of quince jelly
- Salt and pepper

Direction
- With a fork, crush the cheese and chives together. Add salt and pepper.
- Form the cheese into small balls, then place them between two slices of toasted gingerbread.
- Garnish each slice with a bit of quince jelly, and decorate with chives.
